The nutritional benefits of tofu have been known for centuries. Check out how much recipes the Korean and Japanese that have tofu on them.
Tofu can be found in bulk or individual packages, both of which are refrigerated. Tofu is also sold in sealed containers kept at room temperature, which do not need refrigeration until they are opened. When opened, all tofus needs to be rinsed, covered with water and kept in a refrigerated container. To keep the tofu fresh for up to one week, the water should be changed often. If kept in the original package, you can freeze tofu for up to five months.
I have found a liking of buying tofu from Rustan’s Fresh. They sometimes have this fresh and firm tofu at the vegetable section near the kimchi section. It pays to check the expiration date as well as the smell and quality of water.
Now let me share with you my variation of Dubu buchim:
1- fry the sliced and drained firm tofu
2- to prepare the sauce:
3- Mix and pour over fried tofu
1 clove of minced garlic
1 chopped green onion
1 tsp hot pepper flakes
1 tsp honey or brown sugar
1 tbsp soy sauce
1 tsp sesame oil
4- Sprinkle with roasted sesame seeds before serving.
